Our Story

Maurice Koenig represents the second generation of his family to cultivate these lands. After an organic and biodynamic farming apprenticeship in Switzerland, he returned to continue the family legacy. Driven by a deep-seated respect for the ecosystem. Located in Saskatchewan, we specialize in heritage garlic and sustainable agriculture. Our mission is centered on land stewardship—nurturing the soil so it can, in turn, provide wholesome, chemical-free food for our community, building upon our long-standing farming heritage.

Meet the Farmer

Maurice Koenig is the steward of Greenbrier Farms. As a second-generation farmer in Saskatchewan, Maurice carries a deep ancestral connection to the land. His use of strictly organic practices reflects a lifelong commitment to sustainable agriculture, focusing on nurturing the unique properties of the prairie soil to produce high quality, nourishing food.

While Maurice leads the vision, the daily cultivation is supported by our dedicated seasonal field crew, a group of hardworking individuals committed to the community and the integrity of our produce.
